Oxtail & Green Lentils
In the Slow Cooker
Ingredients
- 2kg oxtail
- 1 medium onion, diced
- 5 carrots
- 3 bay leaves
- salt & pepper
- 2 tbsn tomato paste
- 1 pack of green lentils
- water
- splash of malt vinegar
Set slow cooker to Low.
Directions
1. Put onion, sliced carrots and oxtail in slow cooker.
2. Mix in tomato paste, salt, pepper, bay leaves and lentils.
3. Add water to just cover and a splash of malt vinegar.
Set to Low and ready to eat in about 8 hours. Set to High and ready to eat in 5 hours.
