Apricot Jam

For about 5 jars of jam


  • 5 kg very ripe apricots
  • 1 kg raw sugar
  • If using less than 5kgs use sugar proportionately.


  1. Wash and take out seeds of apricots and put in 5 litre saucepan.
  2. Squish the apricots thoroughly with your hands.
  3. Throw sugar on top and cook at reasonably high heat stirring regularly until all dissolved and fruit is mushy – maybe about an hour or so, then reduce heat and keep stirring for about another hour or so, until thickened.
  4. While still hot pour into jars and put lids on.
