Baked Cheesecake

Ingredients

  • 250 g packet plain sweet biscuits – Scotch Finger are the best
  • 125 g butter, melted
  • 2 x 250g packets of cream cheese, softened
  • 1 tsp vamilla extract
  • 1 tsp finely grated lemon rind
  • 3 eggs 

Directions

  1. Preheat oven to 140°C. Grease a 6cm-deep, 22cm round spring-form cake pan and place baking paper on bottom.
  2. Crush biscuits in strong plastic bag with a rolling pin until they are fine crumbs. Pour into a bowl and add melted butter. Mix well until combined. Press mixture over base and sides of pan. Refrigerate for 30 minutes.
  3. Put cream cheese, sugar, sour cream, vanilla, eggs and lemon rind in a bowl and mix with electric mixer until smooth. Pour into prepared biscuit crumbs. Bake for 50 minutes to 1 hour or until just set and centre wobbles slightly. Allow to cool in oven for 2 hours, with door ajar. Refrigerate.
  4. Decorate with fruit of choice before serving.
